Chocolate, Chocolate Everywhere
But Which Chocolate Do I Need?
At JM Posner we are passionate about chocolate. With its use across all types of desserts, or even just on its own as a sweet treat. You can't deny that when discussing sweet treats, chocolate is at the top of everyone's list. Which is why we have tried to bring you as many varieties and options as possible.
We also pride ourselves on the quality of our chocolate. This is why we have taken the time to test multiple recipes before picking the ones we offer our customers. With a focus on taste, the high quality we expect, and providing the best value to our customers.
Over the last 12 months, we have seen a surge in the cost of chocolate. Caused by a poor cacao bean harvest, this has resulted in a shortage of cocoa mass, affecting the global market. At JM Posner, we have done our utmost to make sure our customers have what they need, no matter what your chocolate use. Because when you are happy, we are happy.
So, let’s look at the different types of chocolate that we have and the different purposes for each. Then we can help you make sure you are buying the best one for you.
Liquid Chocolate
Liquid Chocolate or chocolate sauce has been one of our major products for many years. JM Posner started by supplying fountains to customers. But if you are buying a chocolate fountain, you need chocolate to go in it. Which is where liquid chocolate comes in.
Made to our specification, our liquid chocolate is perfect for using in a fountain. With no need to pre-melt or add oil and other products to thin it out, you can just give the bag a good shake and pour it into the fountain.
What's even better is, unlike other sauces, our liquid doesn't have a "chocolate flavour". Instead, it tastes like you melted your favourite chocolate bar. And makes you want to stick your whole head in the tub.
But this product isn’t just for use in fountains. Perfect for dipping, drizzling and decorating, it has so many uses. You can add it to bottles to squeeze on top of your crêpes/waffles/ice cream or serve in little pots for dunking. You could even use it to decorate plates for serving your desserts.
Available in 8 different flavours, as well as 2 vegan options. Skip the faff of melting chocolate, try liquid instead.
Chocolate Spreads, Fillings and Coatings
With dessert fillings and coatings, the requirements are usually different. Often you want something that is spreadable but not too hard and provides a nice finish while still have a rich flavour. Which brings us to our range of Spreads, fillings and coatings. While these products all appear similar at a glance, they each have different purposes to bring your baked goods to the next level.
Vela Chocolate : Our vela spreads are perfect for filling all your bakes. With a thick consistency and rich flavour, it is perfect for filling cupcakes.
Not to mention, it's also bake-stable. So, you can use it in cookie pies, stuffed cookies, and similar products without dissolving it into the product itself. We have 6 flavours available on our website, and one no added sugar version.
Sacher Chocolate : Our Sacher spread has a much thicker consistency and glossy finish. While still packed with flavour, it is good for warming slightly and then spreading on cakes or using to form drips.
We also recommend it as a filling for prebaked items. Unlike Vela, it is not bake-stable, so not recommended for the oven. We currently have 4 flavours of Sacher available, including a rich Sacher caramel.
Ganache Chocolate: Our ganache is the perfect filling for your cakes and truffles. It has a creamy, rich consistency, with loads of flavour. Perfect for spreading or piping, and comes in milk, white and dark variations. Developed by Blanxart, it is perfect for experienced bakers that want to save time, or those new to the trade.
Solid Chocolate
This leaves the ever-popular solid variations, and our biggest range. Whether you are looking for buttons, microchips or chunks, we have something for you. All our Chocolate includes a high cocoa percentage to achieve a rich, delicious flavour.
Premium Chocolate : Our premium chocolate is a great all round product. With a full flavour, it melts easily and leaves you with a glossy finish.
You could melt it to go in a chocolate fountain or drizzle on top of bakes then left to set. You can bake with it, use it for decoration, or even eat the chocolate chips straight from the bag. Available in milk, white or dark.
Chocolate Compound : Compound is a slightly cheaper alternative to our luxury variety. It has a higher melting point than couverture chocolate, so it melts much slower. Which means, if used to decorate cakes or similar, it will hold its shape at room temperature. No risk of drooping decorations.
The higher melting point also makes it suitable for cookies, brownies, and other chocolate recipes. Especially items where you want those solid lumps throughout the bake. Not only that, but our compound comes in a variety of flavours. Choose from milk, dark, white, strawberry and the recently added caramel.
Chocolate Alternative : With the rising cost of chocolate, we have also made efforts where we can to find a solution for our customers. Which brings us to our alternative.
It acts in much the same way as our luxury version, making it ideal for melting and baking. But with a lower price due to the slightly different ingredients. You can find out more about how it behaves in our blog; Our New Alternative Chocolate: Blind Test Results.
Other Chocolate Options.
We also have microchips, available in milk, white and dark, these are perfect for melting into hot milk to make hot chocolate. You can also find curls and shavings, in different sizes, and flavours. These make stylish decorations for any dessert, and taste amazing.
If you are looking to bake chocolate cakes and similar, we also have a supply of cocoa powder on our website. This is perfect for any chocolate treats you are looking to make, as the alkalised process makes it darker with a sweeter taste.
To pack a punch with your finishing touches, under the toppings section on our website you can find cocoa nibs. These are 100% unsweetened chocolate nibs, bringing rustic charm as well as a powerful hit of flavour.
The proof is in the dessert.
As you can see, here at JM Posner we put a lot of effort into sourcing the best types and varieties of chocolate. We want to ensure that all our customers can receive the best products to fulfil their dessert needs.
But the proof is in the pudding as they say, so take a risk, place an order. You won’t be disappointed.
