Our process commences with the time-honoured method of direct flame roasting, an artisanal technique refined throughout the years at Blanxart. Once roasted, the beans transition to the shelling and grinding phase, during which they are meticulously crushed and their shells removed, revealing the precious nibs. These nibs are then further ground until they transform into a refined cocoa paste that encapsulates the very essence of the chocolate. At Blanxart, we craft chocolate using traditional recipes that have been handed down over the years, while incorporating ingredients in precise proportion. The amalgamation is then taken to the conche, where the recipe reaches its culmination. During the conching process, we bestow tender care upon the chocolate, engaging in meticulous and continuous movement with the stone roller for hours on end. As the astringent acids dissipate, a velvety texture and a harmonious blend of flavours emerge. Once the chocolate attains its optimal state, it must be brought to a precise temperature for flawless moulding. It is then that the desired texture and glossy appearance materialize upon solidification. Applying our profound knowledge of chocolate-making and artisanal craftsmanship, we delicately pour the tempered chocolate into moulds, allowing it to conform to its desired shape. After a brief cooling period, the chocolate contracts, allowing for effortless removal from the moulding and revealing its final form—a lustrous chocolate bar, akin to a coveted gold ingot. As the final touch, each bar is lovingly enveloped in vegetable paper adorned with our distinctive artisanal design, ensuring that our cherished customers truly understand the authentic origin of the chocolate they hold in their hands.
